Zidantou dried chili peppers offer medium heat and a strong chili aroma. Also known as bullet chilies, they are a familiar ingredient in Sichuan cooking. Consider them for dishes such as kung pao chicken, where dried chili is cooked with other aromatics to form the flavor base.
